At Zen Hibachi & Sushi, we’ve been inspired by the rich ramen culture of southern Japan—especially Kyushu-style Tonkotsu ramen—and reimagined it in our own unique way to deliver a deeper, richer flavor experience.

🐷 The Soul of Kyushu – Tonkotsu Ramen
Tonkotsu ramen originated in Hakata, Fukuoka in the Kyushu region of Japan.
“Tonkotsu (豚骨)” translates to “pork bone,” and the signature broth is made by simmering pork bones, chicken bones, and vegetables for several hours to achieve a creamy, milky consistency packed with umami.
Traditionally, this ramen features firm, thin straight noodles, topped with tender slices of pork (chashu) and a savory broth that is both rich and comforting.
First served in 1937 at a restaurant called Nankin Senryo in Kurume, tonkotsu ramen has since spread across Japan, becoming widely known as Hakata Ramen, Kurume Ramen, or simply Kyushu Ramen.
